Pail Full of Muffins

Ingredients
- 1 cup crisco or margarine
- 3 cups white sugar
- 4 eggs
- 1 qt buttermilk
- 5 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 4 cups 100% bran
- 4 cups raisins or chopped dates
Steps
- In a very large bowl (or bath tub), cream crisco or margarine, white sugar, and eggs. Add buttermilk then bran mixture. Stir until blended.
- Stir in all-purpose flour, baking soda, and salt. Add to above mixture. Mix well.
- Add 100% bran and fold in until just moist. Add raisins or chopped dates.
- Chill 1 day before baking.
- Bake at 375 F for 15-20 minutes.
This recipe keeps in the refrigerator in a covered jar. Batter can be made ahead and baked in batches.
